Beach Party Cookie Pizza

Turn dessert into a picture-perfect beach day masterpiece! Top your cookie “canvas” with waves of frosting, graham cracker sand, and Mother’s® Summer Sidekicks™ Cookies. Then enjoy this slice of fun in the sun! 

Yield: 1 each 10-12" Cookie Pizza

Ingredients

  • 1 x 9 oz. bag of Mother’s Summer Sidekicks Cookies
  • 1 each 16-19 oz. package snickerdoodle or sugar cookie mix, plus ingredients listed on the package
  • 1 each 16 oz. container whipped vanilla or cream cheese frosting
  • blue food coloring, liquid or gel, as needed
  • 1 ½ cups graham cracker crumbs (about 12 crackers)
  • Miniature beach toys, optional

Directions

  1. Open the bag of Mother’s Summer Sidekicks Cookies. Select about ⅓ of your favorite cookies to decorate with. Roughly chop the rest and set both aside.
  2. Preheat oven and mix cookie dough following package instructions. Fold in chopped Mother’s Cookies.
  3. Shape dough into a round pizza shape on a lined baking tray or nonstick pizza pan.
  4. Bake at the temperature listed on the package until fully cooked and the surface just starts to turn golden.
  5. Cool baked cookie completely. Depending on your preference, you can transfer the cookie to a serving tray or leave it directly on the baking pan.
  6. Split frosting in half. Add a few drops of blue food coloring to one half, mixing until a light blue color is reached. Adjust if needed.
  7. Frost the entire surface. Use light blue frosting on one half for the sea, and white or cream frosting on the other half for the beach.
  8. Top the white or cream half with graham cracker crumbs to resemble sand.
  9. Decorate the pizza with the reserved Mother’s Summer Sidekicks Cookies, mini beach toys, and any other toppings you might want.
  10. To serve, slice pieces of your beach masterpiece as desired.

Chef’s Notes:

  1. Channel your inner artist by using some white frosting to create “white caps” in your sea of blue frosting.
  2. You can store the cookie pizza in an airtight container at room temperature for up to 2 days, or covered in the fridge for up to 5 days.
  3. For a larger sandscape, mix graham cracker crumbs with sugar and melted butter following a standard graham cracker pie crust recipe. This mix is great for use in clean beach toys to shape edible sandcastles.
